And sometimes it’s fun to get your hubby in on the wellness journey with you - even if that means putting him in front of the camera. Luckily he’s anything but camera-shy ;-).
It’s easy to get bored with the same dinner routine week to week. We sometimes get in a rut of ordering the same types of food items from Fresh Direct (especially when we’re limited on time), so it’s fun to mix it up - even if that means using a completely different marinade over the same piece of chicken. This time, we decided to try a completely different meat as well (we love pork but never really think to buy it for a home-cooked meal). Pork tenderloin is a very lean meat choice. It’s a great source of vitamin B and is one of the best natural sources.
Here’s a delicious, healthy recipe that basically cooks itself in a Crock-Pot - just make sure you have time to prep a few hours before eating.
Balsamic Pork Tenderloin in a Crock-Pot:
Serves: 5 (each serving includes about 5 oz of pork plus sauce - pork does shrink a bit when cooked)
Prep Time: 10 minutes
Cook Time: 2 1/2 - 3 hours on high heat or 5 1/2 - 6 hours on low heat
Difficulty Level: SOOO EASY
1 ½ lbs boneless pork tenderloin
1 cup onions, chopped
½ cup balsamic vinegar
½ cup water
¼ cup honey
2 Tbsp Worcestershire sauce
2 Tbsp reduced-sodium soy sauce
1 Tbsp fresh garlic cloves, chopped
¼ tsp red pepper flakes
Chop onions into medium-sized pieces.
Place pork tenderloin into Crock-Pot. Sprinkle onions over the top and around the pork.
In a small bowl, mix together all remaining ingredients. Pour the mixture over the pork and set the timer on the Crock-Pot for 2 ½ - 3 hours on High or cook on Low heat for 5 ½ - 6 hours. The cook time may vary depending on your Crock-Pot, so you can check the consistency of the pork on the lower end of the timeframe, based on your heat setting.
Once the pork has cooked, remove from the Crock-Pot onto a cutting board. Cut pork into thin slices. Pour about ½ or the entire cup of the sauce including onions over the pork (can use any leftover sauce mashed into a baked potato or over leftover chicken for another meal).
