Chicken Sausage & Veggie Cauliflower Pizza for Summer

Since it’s summer, and we all want to eat healthy and lighter to get beach-ready, I thought I would share one of my fave healthy go-to dinners that’s quick, easy, and light (yet filling). Using chicken sausage is completely optional if you’d like to keep this meal entirely vegetarian.

Chicken Sausage & Veggie Cauliflower Pizza

Prep Time: 5-10 minutes

Cook Time: ~10 minutes

Serves: 2 people

Ingredients:

  • Olive Oil Pam spray or 1-2 Tbsp Olive Oil

  • 1 cauliflower pizza crust (available at Whole Foods)

  • 1 cup of desired vegetables (spinach, broccoli, mushrooms, onion, butternut squash, tomatoes, etc.)

  • 2 chicken and apple sausage links (or another version of chicken sausage)

  • Desired spices (oregano, black pepper, garlic, balsamic vinegar, etc.)

Directions:

  1. Preheat oven to 425°. Spray nonstick pan with Pam or cover with 1 Tbsp olive oil and place the cauliflower pizza crust on the pan (can use tinfoil for easy clean-up).

  2. While oven is preheating, chop up desired vegetables on a cutting board.

  3. When ready, place the cauliflower pizza crust in the oven and bake for 6-8 minutes (depending on desired crispiness).

  4. While cauliflower pizza is baking, add 1 Tbsp of olive oil to a pan and add in all vegetables (if using onion and/or butternut squash, it might be a good idea to start with those since they take the longest to cook). Add in desired spices. Cook for 5-10 minutes (or until desired crispiness).

  5. Remove cauliflower pizza crust from the oven and let cool for 3-5 minutes.

  6. When vegetables and chicken sausage are done cooking, place on top of the cauliflower pizza crust on a plate. Can cut into servings like a real pizza.
